Bergeron’s Smoke Can Grilled Hot Dog Collection
These recipes work with all-beef hot dogs, pork-and-beef franks, turkey dogs, chicken dogs, bratwurst-style links and plant-based hot dogs.
Each version uses one of your Bergeron’s Smoke Can flavors and a matching set of toppings.
Master Smoke-Grilled Hot Dog Method
Servings: 6
Preparation: 10 minutes
Cooking time: 10–16 minutes
Ingredients
6 hot dogs or sausage links
6 sturdy hot dog buns
1 tablespoon neutral cooking oil
1 Bergeron’s Smoke Can in your selected flavor

Prepare the grill
Set up the grill for two-zone cooking at approximately 350–400°F.
Activate the Bergeron’s Smoke Can according to the package directions.
Place the hot dogs over indirect heat and close the lid.
Let them absorb flavored smoke for approximately 6–10 minutes, turning once.
Move them over direct heat for 1–2 minutes per side to brown the casings.
Toast the buns over indirect heat for approximately one minute.
Most packaged hot dogs are fully cooked. USDA advises reheating fully cooked hot dogs until steaming hot; grilling guidance lists 165°F or steaming hot. Uncooked red-meat sausages should reach 160°F, while uncooked poultry sausages should reach 165°F. Always check the package because some links require full cooking.
Avoid cutting deep slashes into the hot dogs because juices can escape. Shallow diagonal scoring is optional and helps toppings cling to the surface.
1. Apple & Honey Crisp Hot Dog
Apple-Honey Cheddar Dog
A sweet, smoky hot dog with crisp apples and tangy mustard.
Ingredients
6 all-beef or pork hot dogs
6 brioche buns
1 crisp apple, thinly sliced
1 cup shredded sharp cheddar
½ cup caramelized onions

Honey-Dijon sauce
¼ cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon honey
1 teaspoon apple-cider vinegar
Pinch of black pepper
Directions
Smoke-grill the hot dogs using the master method.
Mix the sauce ingredients.
Place each hot dog in a toasted bun.
Add cheddar, caramelized onions and thin apple slices.
Drizzle with honey-Dijon sauce.
Optional addition: crispy bacon or chopped pecans.

2. BBQ Mesquite Hot Dog
Mesquite Smokehouse Dog
This is the strongest traditional backyard-barbecue combination.
Ingredients
6 all-beef hot dogs
6 toasted buns
¾ cup barbecue sauce
1 cup smoked cheddar
1 cup crispy onion strings
½ cup chopped dill pickles
BBQ Mesquite Smoke Can
Directions
Smoke the hot dogs over indirect heat for 6–10 minutes.
Finish over direct heat until lightly charred.
Place them in toasted buns.
Add barbecue sauce, smoked cheddar and crispy onions.
Finish with chopped pickles.
Loaded variation

3. Bing Cherry Hot Dog
Cherry-Bourbon-Style BBQ Dog
A sweet-and-savory specialty hot dog with cherry barbecue sauce.
Ingredients
6 beef or pork hot dogs
6 pretzel buns
6 slices white cheddar
½ cup grilled red onions

Cherry barbecue sauce
½ cup barbecue sauce
3 tablespoons cherry preserves
1 tablespoon apple-cider vinegar
1 teaspoon Dijon mustard
Pinch of black pepper
Directions
Combine the sauce ingredients and warm gently.
Smoke-grill the hot dogs.
Add white cheddar during the final minute so it begins to melt.
Place the hot dogs in pretzel buns.
Top with grilled onions and cherry barbecue sauce.
Optional additions: bacon, jalapeños or crumbled blue cheese.

4. Black Peppered Bacon Hot Dog
Loaded Bacon-Pepper Dog
A rich, savory hot dog with extra bacon, cheese and pepper sauce.
Ingredients
6 all-beef hot dogs
6 toasted buns
6 slices cooked bacon
1 cup shredded smoked Gouda or cheddar
½ cup sautéed onions
Coarse black pepper
Black Peppered Bacon Smoke Can
Pepper sauce
¼ cup mayonnaise
1 teaspoon Worcestershire sauce
½ teaspoon Dijon mustard
½ teaspoon coarse black pepper
¼ teaspoon garlic powder
Directions
Wrap each hot dog with one thin bacon strip and secure it with toothpicks.
Smoke over indirect heat until the bacon begins to render.
Finish carefully over direct heat, turning frequently.
Remove the toothpicks.
Place each dog in a toasted bun.
Add cheese, onions and pepper sauce.
Finish with additional cracked pepper.
Use caution because bacon fat can cause flare-ups.

5. Hickory on Hickory Hot Dog
Classic Double-Hickory Dog
This version keeps the toppings familiar so the hickory flavor stands out.
Ingredients
6 all-beef hot dogs
6 traditional hot dog buns
¾ cup hickory-style barbecue sauce
1 cup shredded sharp cheddar
½ cup diced onions
½ cup bread-and-butter pickles

6 beef or pork hot dogs
6 brioche or pretzel buns
6 slices cooked bacon, chopped
1 cup smoked Gouda
½ cup caramelized onions

Maple-mustard glaze
3 tablespoons pure maple syrup
2 tablespoons Dijon mustard
1 tablespoon barbecue sauce
1 teaspoon apple-cider vinegar
Pinch of cayenne pepper
Directions
Combine the glaze ingredients.
Smoke-grill the hot dogs.
Brush them lightly with glaze during the final minute.
Place in toasted buns.
Add smoked Gouda, caramelized onions and bacon.
Drizzle with a small amount of remaining glaze.
Apply the maple glaze near the end because the sugar can scorch over direct heat.

A smoky, spicy hot dog with cool avocado and bright lime.
Ingredients
6 beef, chicken or turkey hot dogs

1 cup shredded pepper jack
1 avocado, diced
½ cup pico de gallo
¼ cup pickled jalapeños

¼ cup mayonnaise or sour cream
1–2 teaspoons chipotle sauce
1 tablespoon lime juice

Directions
Mix the crema ingredients.
Smoke-grill the hot dogs.
Add pepper jack during the final minute.
Place each hot dog in a toasted bun.
Top with avocado, pico de gallo and jalapeños.

Top smoke-grilled hot dogs with:

Smoked Bratwurst Dogs
Use uncooked bratwurst rather than precooked hot dogs.
Smoke over indirect heat until nearly cooked.
Finish over medium direct heat to brown the casing.
Confirm the center reaches the safe temperature listed for the meat type.

Ingredients
8 hot dogs
2 tablespoons barbecue seasoning
½ cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon butter

Directions
Smoke-grill the hot dogs for approximately 8–10 minutes.
Cut them into 1-inch pieces.
Place in a foil pan with barbecue sauce, brown sugar and butter.
Return the pan to indirect heat for 15–25 minutes.
Stir occasionally until sticky and caramelized.

Smoke Can Hot Dog Sliders
